This is a filling breakfast idea that comes in a gorgeous purple hue and delivers a healthy dose of anthocyanins, a beautiful antioxidant for your body. Blueberries also contain a diverse range of phenolic compounds and are low in sugar.
Oats add texture and are a low-glycemic, filling grain. Yogurt offers probiotics and a serving of protein. I blend in only half of a frozen banana to keep the sugar content low but allowing for plenty of creaminess.
Top with homemade granola and a handful of fresh berries for a wholesome, easy and delicious breakfast.
Blueberry Muffin Bowl
1/2 c. frozen blueberries
1/2 a frozen banana
1/2 c. plain yogurt (plant or dairy based)
1/4 c. old fashioned oats (not quick)
1 T. vanilla protein powder (optional)
1/2 c. milk (plant or dairy based)
Toppings: granola, nuts, fresh berries and fruit
Place all of the ingredients in a blender and blend until frosty and creamy. Pour into a bowl and top as desired. To drink as a smoothie, increase the milk to 1 c.
