Unsweetened shredded coconut and coconut milk are full of healthy saturated fats. The caramel-like sweetness of dates merges with deep chocolate protein powder to create that ooey-gooey girl scout cookie taste. This smoothie offers a hefty dose of protein, healthy fats, a stealthy serving of veggies and a delicious taste!
Instead of a banana, frozen cauliflower lend frosty creaminess without added sugar. I love this smoothie poured into a bowl and topped with cacao nibs and additional shredded coconut for a satisfying crunch.
Samoa Smoothie Bowl
1 c. frozen cauliflower
1/4 c. shredded, unsweetened coconut
1 serving chocolate protein powder (I like Nuzest Clean Lean Protein in Rich Chocolate)
2 dried dates
1/2 t. vanilla extract
3/4 c. full fat, canned coconut milk (plus more as needed)
Toppings: cacao nibs, shredded coconut, chopped dates
Place the frozen cauliflower, coconut, protein powder, vanilla, dates and coconut milk in a blender. Blend on high until smooth and creamy. Add more coconut milk if needed. I like it thicker in a bowl, and more “drinkable” in a glass! Pour into a tall glass or a bowl and top as desired. Enjoy immediately!
