Maybe the name is a bit much but this smoothie bowl really does have it all! It will totally satisfy any cravings you have for peanut butter cup ice cream – but it’s incredibly healthy with no dairy, no refined sugar, no gluten! It also contains a good dose of plant-based proteins, healthy fats, and fiber! It’s almost too good to be true.
It takes 30 min to make the chocolate granola, but it is so worth it! Your kitchen will smell delicious and then you can indulge in this bowl several times during the week. You can also eat it by the handful!
The smoothie base itself is as simple as can be; a banana, a splash of almond milk, peanut butter, flax seed and a spoonful of protein powder. It’s frosty and peanut-buttery, and the crunchy, cacao-flecked granola topping with just a kiss of sea salt takes the whole thing over the edge. This is healthy enough to power your morning but definitely tastes like dessert!
Peanut Butter Banana Chocolate Crunch Smoothie
Chocolate Granola:
1 c. rolled oats
1/4 c. slivered almonds
1/4 c. unsweetened shredded coconut
2 T. cacao or cocoa
1/2 t. salt
2 T. coconut sugar or maple syrup (more if making this for kids)
2 T. coconut oil
1/2 t. vanilla extract
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. Mix the oats, almonds, coconut, cocoa and salt in a bowl. In a small saucepan, warm the coconut oil and maple syrup or coconut sugar over medium heat until melted. Remove from heat and add the vanilla. Pour over the oat mixture and stir well to combine. Spread on the parchment lined sheet and bake for 10 min. Stir the granola. bake for 10 min more. Allow to cool completely.
If more chocolate is desired (Uh…yeah!) add in 2 T. cacao nibs (for adults) and 3 T. dairy-free chocolate chips (for kids).
Peanut Butter Banana Smoothie Bowl:
1 frozen banana
1 1/2 T. natural peanut butter
1 T. vanilla protein powder (Try Nuzest Lean Clean protein)
1 T. flax seed meal
1/2 c. unsweetened vanilla almond milk
Place all ingredients in a blender and blend until frosty. Pour into a bowl and top with the chocolate granola, sliced bananas, chopped peanuts, cacao nibs, chocolate chips and more nuts, as desired.
