I love roasted vegetables, and one of my new favorites is Brussels sprouts, especially when served alongside sweet roasted apples. Simply tossed with olive oil and a touch of maple syrup, then served over a bed of cooked grains, makes for a satisfying meal.
I love how easy grain bowls are, topped with your choice of vegetables, proteins and healthy fats. You could easily top this with additional treats such as pumpkin seeds or pecans, or a crumble of blue cheese.
Topped with cooked chicken or beans to boost the protein content, this easy dish is a complete meal and is ready to eat in no time!
Roasted Apple and Brussels Bowl
1 sweet, tart apple cut into chunks (Such as Pink Lady)
12 Brussels sprouts, halved
1 T. olive oil
1 T. maple syrup
pinch of cayenne
1 c. hot cooked rice or quinoa
1/4 c. cooked chicken or chickpeas
salt and black pepper
Preheat the oven to 375 degrees. Toss the apples, Brussels sprouts with the olive oil and maple syrup. Spread out on a baking sheet and roast for 20 min, turning once.
Remove the sheet from the oven. Place the cooked grains in a bowl and top with the roasted fruit and vegetable. Top with cooked chicken or chickpeas. Season to taste with salt and pepper and serve warm.
