Vegan Chocolate Waffles – gluten-free

20200114_093711.jpgYes, this is a treat!  A more healthy, yet every bit as decadent, cacao waffle made without refined sugar, dairy, eggs or butter.  And it even has a decent hit of protein in it!

Start with garbanzo bean flour, which is totally masked by the cacao in this recipe.  It adds a nice dense texture to the waffles and some honest protein.  To balance this, I use sorghum flour, but you could alternatively use rice flour or a gluten-free flour blend.

I say cacao in the title because that is what I used and the health benefits are many.  However, regular baking cocoa works just as great in the recipe!

Coconut oil makes the edges crispy, and flax eggs bind the batter together nicely.  I thin the batter down with almond milk and a splash of vanilla.  And, because these waffles just aren’t right without sweetness to balance the cacao (I tried it!), I use a touch of coconut sugar.  The result is a rich, deep chocolatey waffle that isn’t overly cloying.  Just tender, chocolate and delicious!

Vegan Cacao Waffles

1/2 c. chickpea flour

1/4 c. sorghum or rice flour

1/4 c. cacao or cocoa powder

1/4 c. coconut sugar

1/3 t. baking soda

3/4 t. baking powder

1/4 t. salt

3/4 c. almond milk

2 heaping T. coconut oil, melted

1 T. flax seeds meal dissolved in 3 T. water

1/4 t. vanilla extract

Mix the flours, cocoa, sugar, baking powder and baking soda in a bowl.  Add in the coconut oil, almond milk, flax gel and vanilla.  Mix well to combine.  Pour 1/3 c. batter onto a preheated waffle iron.  Cook 2-3 min.  Remove and serve.  makes 3 waffles.
