Apple Breakfast Cereal

20200112_091405.jpgThis recipe is so simple, but also so delicious.  The title says “breakfast  cereal” but I eat this quite often after dinner as a dessert.  It’s like eating apple pie filling, minus the sugar but with all the benefits of apples and spices.

Apples are full of flavonoids, a type of phytochemical that may inhibit inflammation and tumor growth, strengthen the immune system and help form detoxification pathways.

The key to excellent flavor is to use a variety of different apples.  I used Pink Lady and Gala apples in the dish shown.  A tart apple, such as Granny Smith, is excellent paired with a sweeter apple.  Buy organic, if possible, so you can eat the peels.  That’s where all the nutrients are!

I top this with raw walnuts and pecans for a healthy dose of omega 3’s and to boost the protein content a little bit.  Non-dairy creamer completes the apple-pie ruse, making the whole thing feel way more decadent.

Apple Breakfast Cereal

1 heaping cup of chopped apples, various kinds

1/8 t. ground cinnamon

pinch of ground ginger

pinch of ground nutmeg

Small handful of walnuts and/or pecans

Non-dairy, unsweetened creamer (I used French Vanilla Nut Pods)  If you prefer, you can use organic heavy whipping cream.

Place the chopped apples in a saucepan with 2 T. water. Sprinkle with the spices and simmer for 5-15 min, until as tender as you would like.  The longer you simmer them, the sweeter they become.

Spoon the apples into a bowl.  Top with nuts and drizzle the creamer over the top.  Eat warm!
