Lazy Veggie Bowl

20200102_154705.jpgHere is my no-excuses way to get back to a feel-good way of eating after the holidays.  By feel good, I mean my body feels good, my mind feels clear and my moods are stable.  Too much sugar, refined carbohydrates and fatty foods over the holiday season taste great, but tend to cause inflammation in the body and over time, cravings start to derail good food habits.


So here is my answer: a random mix of veggies from the drawer – whatever looks good, tossed with olive oil, roasted until caramelized and then served over a bed of cooked grains.  There are so many options for dressing this: I like a dollop of hummus thinned down with lemon juice and olive oil.  You can also season it with garlic and tamari, a citrus vinaigrette, or simple salt and pepper.

Here, I used carrots, onions, bell pepper, sweet potato and green beans.


Lazy Veggie Bowl

1 carrot, sliced

1/4 of a yellow onion, diced

1/4 of a sweet potato, cut into 1/2″ cubes

1/4 of a bell pepper, slivered

handful of green beans

olive oil

hot cooked brown rice or quinoa


Dressing Option 1:

1 heaping Tablespoon hummus

1 T. lemon juice

1 T. olive oil


Dressing Option 2:

3 T. olive oil

2 T. apple cider vinegar

1 T. chopped fresh thyme

1 T. lemon juice

½ t. Dijon mustard
