Herbal Socca with Pesto, Mushroom and Tomato


Delicious for breakfast, lunch, dinner, a quick snack!  This protein filled socca is loaded with whatever green herbs you have on hand…parsley, basil, cilantro, oregano…and then quickly fried in olive oil and topped with whatever you fancy.  So easy and so satisfying.  Get creative!


Herbal Socca with Pesto, Mushroom and Tomato

1/2 c. chickpea flour

1 handful of fresh herbs

1/4 t. salt

olive oil

To top:

sauteed mushrooms

sauteed onions

fresh pesto

roasted tomatoes

salt/pepper/and a drizzle of really good olive oil

In a blender, combine the flour, water, herbs and salt.  Blend on low until you have a smooth, green batter.  Add more water if needed to make it thin enough to spread when you pour it.

Heat a skillet over medium.  Add a splash of olive oil, then pour in the batter.  Cook for 3 min, flip, and then cook for 3 min more.

Finish with desired toppings.
