A low-sugar, quick and easy breakfast treat. This easy mug is loaded with healthy fats, fiber and protein. With no added sugar, the sweetness comes from real strawberries.
The base is made with almond flour, unsweetened shredded coconut and walnuts.
The batter is thick and pink colored. Microwave for 2 minutes.

Top with organic yogurt or cream cheese and fresh chopped strawberries.
If you do not tolerate dairy, try coconut cream, vegan cream cheese, or dairy-free yogurt.
Strawberry Cheesecake Breakfast Mug
1/4 c. almond flour/meal
2 T. shredded unsweetened coconut
1/4 t. baking powder
1 T. chopped walnuts
1 T. strawberry, mashed with 1 drop stevia added
1/4 c. unsweetened almond milk
Topping: organic yogurt, cream cheese and strawberries
Combine the almond flour, coconut, baking powder, walnuts, mashed strawberry mixture and almond milk in a coffee mug. Stir well to combine. Microwave on high for 2 min. Batter will cook until it is a warm, soft mini-cake. Top with yogurt or cream cheese and fresh chopped strawberries, and/or more walnuts to taste.
