No sugar, dairy or gluten- Chocolate Smoothie Bowl

20190630_102143Hot summer weather is here and I’ve been making this smoothie bowl a lot.  I love chocolate in the morning and this bowl provides plenty of healthy fats, protein and carbohydrates to fuel my day.  Without sugar!

I like that if I prep this the night before, it only takes a few minutes and I can look forward to a fast and yummy breakfast in the morning.  You can change the basic recipe by subbing coconut flour for the almond meal, really any kind of protein powder, and playing around with milk options.  You can also use any kind f yogurt in place of the coconut cream.  However, any of these options may add sugar to this basic recipe.

Coconut cream is a great base loaded with good fats and a smooth texture.  You can usually find it in the grocery store near the canned coconut milk,, with the Asian foods.

Banana adds sweetness and a good dose of potassium.

I use cacao rather than cocoa, for antioxidants and other amazing benefits.

Vegan vanilla protein powder.  This one is lightly sweetened with stevia.  It tastes great!

Buckwheat groats soak in the smoothie overnight and offer some carbohydrates and fiber to your morning fuel.

I love it topped with crunchy things like cacao nibs and almonds.  This bowl is so satisfying and tastes like a real treat!

Chocolate Smoothie Bowl

1/4c. canned coconut cream (or yogurt)

2 T. vanilla protein powder

1/2 of a ripe banana

3/4 c. unsweetened almond milk

2 T. cacao powder (or cocoa powder)

2 T. almond meal/flour

1/3 c. buckwheat groats

 

Place the coconut cream, protein powder, banana, almond milk, cacao and almond meal in a blender and blend until smooth.  Pour into a large bowl and  gently stir in the buckwheat groats.

Place in your refrigerator overnight.  In the morning, place a serving into a small bowl and top with whatever you like – almonds, cacao nibs, raspberries, bananas etc…
