Sometimes the best foods are simple. This recipe is of of those and I eat these all the time! Just three ingredients – sweet potatoes, olive oil, sea salt – and a little patience while they cook.
I like to cut the sweet potatoes into half moons, and very thin. I used three different colors for this – orange, white and purple. I love the purple sweet potatoes as they taste a little bit different, and they a high in anthocyanins – protective antioxidants that give deep purple veggies their color. These beauties contain up to 150% more antioxidant power than blueberries!
I toss them in a bowl with a generous swirl of olive oil. Check out that purple color!
Spread them thinly on a sheet and roast at 350. I try not to let them touch as they will get crispier, faster that way – but they are so dang delicious that sometimes I am greedy and just cut too many to fit!
When they are done, sprinkle with sea salt and enjoy!
A few of these maybe got a bit too browned but you know what?…I ate them all anyway.
Sweet potato fries are remarkably high in vitamin A. They also have a lower glycemic load than regular white potatoes so although they taste sweet, they are easier on your blood sugar. Great additions to a healthy diet!
Sweet Potato Fries
1-3 sweet potatoes, depending of how many fries you want to make!
olive oil
sea salt
Cut the potatoes into half moon shapes. Toss with olive oil until well coated. Spread on a baking sheet and roast at 350 for 30 min, flipping them halfway through the cooking time. Sprinkle with sea salt and eat.
