Creamy Vanilla Chia Breakfast Pudding


Finally – a chia pudding with a texture that I can stand!  Served cold from the refrigerator, this has the texture of yogurt with a light, vanilla-scented flavor.  Perfect for topping with raw almonds, pecans, walnuts, shredded coconut and chopped figs.

Chia are amazing tiny seeds!  Some of their benefits include:

They are a rich source of omega-3 fats.

They have 5 times more calcium than milk.

Chia is high in iron and magnesium.

It is a dense source of protein.

And they are high in antioxidants.


A little goes a long way as they swell when added to liquid.  Give this unique breakfast pudding a try!


Creamy Vanilla Chia Breakfast Pudding

1/2 c. unsweetened vanilla almond milk

1/2 c. canned full-fat coconut milk

1 T. maple syrup

1/2 t. lime juice

1/2 t. vanilla extract

2 1/2 T. chia seeds

Mix all of the ingredients well in a bowl.  Be sure to mix until the chunks of coconut cream (the solidified part) from the canned coconut milk is incorporated.  Cover and let rest overnight in the refrigerator.  In the morning, top with whatever suits you – nuts, fruit, coconut, seeds etc.
