Nothing says, “I love you and your heart” for Valentine’s Day like avocado. But can it be turned into something as luscious as velvety chocolate pudding? Yes! And you won’t even taste the vegetable!
When combined with heart-healthy cacao, a natural sweetener like maple syrup and a splash of vanilla and almond milk, it transforms into something truly special, and good for you!
Add a splash of brewed coffee, chilled, to give it a mocha spin. Garnish with cacao nibs, toasted hazelnuts, or even chocolate chips.

Avocado Chocolate Pudding
2 large, ripe avocados
2/3 c. almond milk, unsweetened
1/4 c. maple syrup
1/4 c. cacao or cocoa powder
1 t. vanilla
1 T. brewed coffee, chilled (optional)
Toppings: hazelnuts, cacao nibs, chocolate chips, banana…anything your heart desires!
Combine all of the ingredients in a blender and puree until smooth and creamy. Chill 1 hr or up to 2 days in the refrigerator.
