Low Sugar Chocolate Energy Bombs


This recipe was developed to use up the almond meal leftover after making homemade almond milk.  If you don’t have this on hand, you can substitute store bought almond flour/meal.

These are great little energy bombs.  I love popping a few in my mouth as I’m running out the door to yoga practice, with a mug of green tea.  They are a terrific antioxidant boost, with a tiny shot of natural energy from the raw cacao.  They also contain no (or low) sugar – depending on how you make the recipe.  So they don’t mess around with my blood sugar.

So…you have a beautiful concoction of  almond meal, shredded coconut, coconut butter, cacao, hemp seeds…just wonderful little bombs of healthy fat and protein to keep you going all day long!


Chocolate Energy Bombs

1c. leftover almond pulp or meal (or store bought almond meal/flour

1 c. shredded unsweetened coconut

1/3 c. coconut butter or almond butter or unsweetened peanut butter

3 T. coconut oil, melted

3 T. cacao powder or cocoa powder

3 T. cacao nibs

3 T. hemp seeds (shelled hemp hearts)

2 T. almond meal (optional) or use coconut flour

1 T. vanilla extract

optional for sweetness: several pinches of cinnamon, 1-2 dates, 1 T. lucuma powder, or 1-2 T. maple syrup.  Choose one or none 🙂

To make: place all the ingredients in a food processor and pulse until it forms into a crumbly mixture.  Form the mixture into walnut sized balls and refrigerate to harden.  Store covered in the refrigerator.

You can substitute any ingredients or add different flavorings.  I have added maqui berry powder and matcha.  Sometimes I sweeten them and sometimes I keep them plain.  They taste like really nice dark chocolate as is, and very sophisticated, without any added sweeteners at all.  Enjoy!
